- Extraction
- The process of dissolving soluble compounds out of ground coffee. Under-extraction tastes sour and thin; over-extraction tastes bitter and drying.
- Brew Ratio
- Dry coffee dose compared to liquid espresso yield. A 1:2 ratio means 18g of coffee producing 36g of espresso.
- Dose
- The weight of dry ground coffee placed in the basket, measured in grams.
- Yield
- The weight of finished liquid espresso in the cup. Measured by weight, not volume, because crema makes volume unreliable.
- Channelling
- Water finding a low-resistance path through the coffee bed instead of flowing evenly, causing simultaneous over- and under-extraction.
- Puck
- The compacted disc of ground coffee in the portafilter basket during and after brewing.
- Portafilter
- The handled device holding the basket that locks into the group head. Commercial standard is 58mm.
- Bottomless Portafilter
- A portafilter with no spouts, exposing the underside of the basket so channelling is visible during extraction.
- Group Head
- The part of the machine the portafilter locks into, where water is delivered to the coffee.
- E61 Group
- A classic thermosyphon group design with high thermal mass, widely used in prosumer machines and known for stability once warmed up.
- Saturated Group
- A group head in direct contact with the boiler water, offering very stable temperature. Common in commercial and high-end home machines.
- PID
- A temperature control system that holds boiler temperature within a narrow band, replacing simpler on/off thermostats.
- Pre-infusion
- A short period of low-pressure wetting before full pressure is applied, helping the puck saturate evenly and reducing channelling.
- Pressure Profiling
- Deliberately varying pump pressure during a shot to shape extraction. Found on higher-end and lever machines.
- Temperature Surfing
- Timing a shot relative to the heating cycle on machines without stable temperature control, to catch the right brew temperature.
- Cooling Flush
- Running water through the group of a heat exchanger machine before brewing, to bring overheated brew water down to target.
- Backflush
- Cleaning the group by forcing water backward through it using a blind basket, usually with detergent. Requires a three-way valve.
- Blind Basket
- A basket with no holes, used for backflushing. Also called a blank basket.
- Pressurised Basket
- A basket with a restricted outlet that creates artificial crema, forgiving of poor grind but limiting for real espresso.
- WDT
- Weiss Distribution Technique — stirring grounds with fine needles to break up clumps before tamping.
- Retention
- Coffee left behind inside a grinder between doses, which stales and contaminates the next dose.
- Single Dosing
- Grinding exactly the amount needed for one shot rather than filling a hopper, keeping coffee fresh and allowing easy switching between beans.
- Burr Alignment
- How parallel a grinder's burrs are to each other. Poor alignment widens particle distribution regardless of burr quality.
- Microfoam
- Steamed milk with bubbles too small to see individually, producing a glossy, paint-like texture suitable for latte art.
- Crema
- The foam layer on fresh espresso, formed from emulsified oils and dissolved carbon dioxide. An unreliable indicator of quality.
- Degassing
- The release of carbon dioxide from coffee after roasting. Very fresh coffee can be difficult to extract evenly until it has rested.
- Dialing In
- The iterative process of adjusting grind, dose, and yield until a specific coffee tastes balanced on your equipment.
- Ristretto
- A shorter, more concentrated shot, typically around a 1:1 to 1:1.5 ratio.
- Lungo
- A longer, more diluted shot, typically 1:3 or beyond.
- TDS
- Total Dissolved Solids — a measure of how much coffee material is dissolved in the liquid, used with a refractometer to calculate extraction yield.
- Thermoblock
- A heating system that warms water on demand as it passes through a heated metal block rather than storing it in a boiler.
- Rotary Pump
- A quieter, longer-lived pump type found in higher-end machines, often plumbable, as opposed to a vibratory pump.
