What Are TDS and Extraction Yield in Coffee?

Total Dissolved Solids (TDS) measures the concentration of dissolved coffee compounds in your beverage — the percentage of your cup that is actual coffee rather than water. A typical brewed coffee has a TDS between 1.15% and 1.45%, while espresso ranges from roughly 7% to 12%. TDS is measured with a refractometer — a small optical instrument that reads the refractive index of a liquid sample and converts it to a percentage.

Extraction yield (EY) tells you what percentage of the dry coffee's soluble mass actually ended up in your cup. Coffee beans contain roughly 28–30% soluble material by weight. The Specialty Coffee Association considers an extraction yield of 18% to 22% the ideal range for brewed coffee — this window maximizes sweetness and flavor complexity while avoiding sour under-extraction (below 18%) or harsh, bitter over-extraction (above 22%).

Extraction Yield Zones & What They Mean for Taste

The table below explains what happens to flavor as extraction yield moves through different zones. These ranges apply primarily to brewed coffee (pour over, drip, French press). Espresso follows the same formula but has different TDS and strength targets — see the notes below the table.

Why Measuring Extraction Matters More Than Guessing

Taste is subjective, but extraction yield gives you an objective anchor point. Two people may disagree about whether a shot tastes good, but neither can argue with a refractometer reading that says 16% of the available solids ended up in the cup.

Measuring extraction lets you repeat success. When a shot tastes incredible, recording the dose, yield, shot time, and TDS means you can reproduce it tomorrow — and troubleshoot what changed when it drifts. It also lets you isolate variables: if you grind one notch finer and see EY go from 19.5% to 21.2%, you know exactly what that grind change did to your extraction.

Professional baristas use TDS/EY measurement routinely during competition prep, quality control, and recipe development. A VST or DiFluid refractometer (starting around $100–$150 for consumer models) is the most precise tool for home use.
