How to use this

What ratio should I use?
- 1:1.5-1:1.8 (ristretto): concentrated, syrupy, common with darker roasts.
- 1:2 (classic): the most widely used modern starting point.
- 1:2.5-1:3 (long/lungo): often suits lighter roasts, brings out more clarity.

Why this matters

Extraction Yield Calculator
Reading the result

| Above 22% | Over-extracted: bitter, drying, harsh |
TDS tells you strength; extraction yield tells you whether you pulled the right amount of soluble material out of the coffee. The two are related but not the same measurement.

Milk Steaming Temperature Guide
Reading the milk
- Glossy, paint-like texture: you're in the right zone — this is microfoam.
- Big bubbles / foamy: too much air introduced, usually early in the steam.
- Flat, sweetish-then-off taste: overheated past target — the pitcher should be uncomfortably warm to hold, not painful.
Stop steaming right around your target range — milk keeps rising a couple of degrees after you pull the wand out.

This is a directional estimate — it doesn't include milk, electricity, or the (real, if hard to price) value of not leaving the house.
Coffee Bean Freshness Calculator
Why roast date matters more than "best by"
Freshly roasted coffee releases carbon dioxide for days after roasting. Too fresh and that gas can make extraction uneven; too old and the flavor compounds have faded. Roast date on the bag — not the "best by" date — is what to track.
Store beans whole, in an airtight container, away from light and heat, and buy amounts you'll finish within a few weeks.
