What ratio should I use?

Milk Steaming Temperature Guide

Quick answer: most milk drinks are best around 55-65°C (130-150°F) — go much above that and the milk's natural sweetness breaks down.

Reading the milk

  • Glossy, paint-like texture: you're in the right zone — this is microfoam.
  • Big bubbles / foamy: too much air introduced, usually early in the steam.
  • Flat, sweetish-then-off taste: overheated past target — the pitcher should be uncomfortably warm to hold, not painful.

Why roast date matters more than "best by"

Freshly roasted coffee releases carbon dioxide for days after roasting. Too fresh and that gas can make extraction uneven; too old and the flavor compounds have faded. Roast date on the bag — not the "best by" date — is what to track.

Store beans whole, in an airtight container, away from light and heat, and buy amounts you'll finish within a few weeks.

Why does my espresso taste sour or bitter?
