Why Roast Date Matters More Than the "Best By" Date

Coffee is a perishable food product that begins to change the moment it leaves the roaster. During the first 24–72 hours after roasting, beans release large amounts of carbon dioxide (CO₂) in a process called degassing. This trapped gas interferes with even extraction — especially in espresso, where it causes channeling, uneven flow, and excessive crema that tastes sharp and sour.

After the initial degassing period, beans enter their peak freshness window — the days when CO₂ has dissipated enough for clean extraction but volatile aromatic compounds are still at their highest concentration. For espresso, this peak typically starts around day 7–10 after roast and lasts until roughly day 21. For filter coffee (pour over, drip, French press), beans are ready sooner — often by day 4–5 — because the lower brewing pressure is less affected by residual CO₂.

The "best by" date printed on most bags is a conservative shelf-life marker — usually 6 to 12 months after roasting. It tells you nothing about when the coffee actually tastes its best. Coffee Bean Freshness Windows by Brew Method

The table below shows the recommended freshness windows for each brew method. These ranges assume whole bean coffee stored in an opaque, airtight container at room temperature. Pre-ground coffee degasses much faster — all windows shorten by roughly 50%.

Note: Light roasts degas slower and may need 10–14 days rest for espresso. Very dark roasts degas faster and can be used sooner (day 5–6 for espresso). Freezing beans in airtight, single-dose portions can pause freshness almost indefinitely.

What Is Degassing and Why It Matters for Extraction

During roasting, chemical reactions inside the bean produce carbon dioxide. After roasting, this CO₂ slowly escapes from the bean's cellular structure — a process called degassing. The rate is fastest in the first 24 hours (beans can lose up to 40% of their total CO₂ on day one) and then slows exponentially over the following weeks.

Why this matters: CO₂ trapped inside ground coffee creates a barrier between the water and the soluble flavor compounds you want to extract. In espresso, where water is forced through the puck under 9 bars of pressure, excessive CO₂ causes channeling (uneven flow), blonde splotchy crema, and a sharp, sour taste — even if your dose, ratio, and grind are perfect. Resting beans until the degassing phase passes eliminates this variable entirely.

For filter methods, CO₂ interference is less dramatic — it mainly affects the bloom phase (the initial pour where grounds swell and bubble). Still, very fresh beans can produce uneven extraction and an unsettled, fizzy quality. Waiting 4–5 days off roast for filter ensures a cleaner, more developed cup.

Whole coffee beans are at their peak freshness between 7 and 21 days after roasting for espresso, and between 4 and 14 days for filter coffee. They remain "good" for roughly 4–5 weeks total. After about 6 weeks, most beans are noticeably stale — the aromatics have dissipated and the flavors flatten. Stored in an airtight container in a cool, dark place, beans last longer than in open bags or clear containers exposed to light.
